Description: As the southern block of the Pinot Blanc vines tilts in a northerly direction, there is a subtle shading of the vines that preserves the racy acidity within the grape and produces a  right wine with a crisp finish.  The lemon-lime zest is clean and forward and there isn’t even a hint of the tropical that nuances the north block Pinot Blanc.

A soft blanket of snow white penicillium candidum wraps this bloomy little log of cheese. Plastic straws allow air to circulate around the edge of this delicate chèvre. At the paste we have a firm, chalky white center which softens toward the nail and extends to the rind. A whiff reveals light lactic notes of buttermilk, a goaty earthiness and a mild nuttiness. The South Pinot Blanc is a wonderful fruit forward wine that shows citrus and bright tropical acidity as well as a blossoming floral underpinning. The vibrant acidity of this Pinot Blanc keeps this pairing moving along with electric zeal. The mineral and grassy nuances of the wine balance
