Roasted Bone Marrow & Parsley Salad

Parsley Salad:
1 bunch Italian Parsley,
chopped
1 Shallot,
finely diced
1 Clove of Garlic, finely
diced
1 T Capers
2 T Extra Virgin Olive Oil
Lemon Juice and Zest from one Lemon
Salt and Pepper
to taste

Combine ingredients and mix thoroughly

Bone Marrow:
4 Pieces of Bone Marrow

Bone Marrow can be hard to find, but when you do, it is such a treat. Ask your local butcher if they can get it in for you.
Roast for 15 minutes at 450F.
Top off with maldon salt before spreading on top of grilled sourdough bread with parsley salad on top.
