Description:The northern block of the Pinot Blanc planting has a gentle southern aspect that delivers a little more sun and warmth than the southern block receives. As such this unique bottling has a bit more of a riper quality than its southern counterpart. The nose has just a touch of the tropical and mouth-feel is full. Still, a beautiful seam of acidity keeps this wine focused and fresh.

Cendre des Pres is a soft bloomy rind cheese done in a Camembert style. Visually striking it sports a clean blue line of maple ash running horizontally through the paste. Snow white at the rind and creamy at the paste, this cheese does not just look the part but is a fabulous addition to any cheese plate. Aromatics show buttery cream and fresh washed cremini mushroom. One bite and you know why a baguette would be heaven! It is like taking a swipe of farm fresh butter, only perfectly spreadable with wonderful mushroom nuances. This North Pinot Blanc is a MUST for this summer! Bright, young acidity, and a slight nod to the effervescent pave the way to star fruit, honeydew and citrus. The musky aromas leave you wanting to listen to a dusky version of my funny valentine. This wine provides the contrast needed to liven up your palate after each
creamy bite of the Cendre des Pres.

Tip: Le Cendre de Pres and Camembert style cheeses will compliment young aromatic white wine most admirably.
