Lemon Squares with Short Crust

Crust:
1 Cup Butter (Room Temperature)
½ Cup Sugar
2 Cup All-Purpose Flour

Filling:
8 oz. Cream Cheese
2 Cup Sugar
¼ Cup All-Purpose Flour
3 Eggs
½ Cup Lemon Juice
1 T Lemon Zest

For the crust, preheat the oven to 350F, in a bowl blend together the butter, flour, sugar. Press into a parchment lined 8×8 inch oven proof pan and bake for 15 – 20 mins. While the crust is baking, cream the cream cheese and sugar together in a blender on medium-high speed. Slowly add the flour and mix until incorporated. Add one egg at a time and mix until smooth. Add the lemon juice, zest and mix on low speed for another minute. Pour onto the pre-baked crust and bake for another 20 -25 mins. Let cool overnight. Slice and dust with icing sugar. Cheers!
