Icewine Cabbage Slaw

Slaw:
1 Head Red Cabbage,
sliced finely
1 Red Onion,
medium, julienned
1 Black Radish,
thinly sliced
1 Carrot,
julienned
1 Apple,
julienned
1 Bunch Chive,
chopped
Handful Cilantro,
chopped

Pickling Liquid:
1 C Icewine
1 C White Wine Vinegar
1/4 C Sugar
2 T Salt
1 T Mustard Seeds
2 Sprigs Thyme
1 t Allspice

If you’re like me, you don’t always know what to do with icewine – I love to drink it, but I can’t bring myself to open a bottle for just my wife and I to enjoy. So, I cook with it! You might think I’m crazy to make a recipe with icewine and pair it with Rose, but trust me on this one – it works!

Mix all pickling liquid ingredients together and bring to a boil to dissolve sugar and salt. Allow to cool in refrigerator. Once cool, add cabbage and onion. Allow to pickle overnight. Remove cabbage and onion from the pickling liquid and add remaining ingredients. Mix thoroughly. Season with salt and pepper to taste. If you find it a little dry, you can add back some of the liquid, or add your favourite vinaigrette.

We served this slaw on top of our friend chicken at the Icewine Festival in Jordan this year. Feel free to serve with pan seared chicken, or even a grilled pork tenderloin.
