The nerve! How can it be so good so soon? In truth, this strikingly bright 2013 Sauvignon Blanc has been confidently bounding towards the bottle since the first berry was picked. Brian saw this fast rising star far off and redirected its energy to support the rapid and sure-footed maturation. “This just oozes passion fruit,” reflects Brian, “plus I get a marked white pepper sensation.” Juicy with a crisp acidity, this full on wine begs for a disc of fine chèvre, calamari fritti, ceviche or even smoked fish.

Cheese Pairing: Fleurmier
Producer: Laiterie Charlevoix
Location: Charlevoix, QC
Milk: Pasteurized Cow’s Milk

Founded in 1948 by Elmina Fortin and Stanislas Labbé this family business has evolved from the trade in dairy products to the production. The Laterie is run by fourth generation children Stanislas and Elmira. The company took a major environmental shift by converting its whey into energy and establishing partnerships with young farmers to save dairy farms in Charlevoix. Laiterie Charlevoix is also working hard to preserve Canada’s only native breed of cow, the Vache Canadienne. Fleurmir has a snow white rind transitioning to a buttery off white paste. Savoury earthy notes are punctuated by mushroom, fresh cream and light ammonia. On the palate this Brie offers rich velvety texture, light nuttiness with almost no bitterness. Vineland Estates 2013 Sauvignon Blanc is fruit forward while remaining dry. The pairing works as a classic match and balance with the two working well as a staple on any cheese board across the seasons. Try this pairing with an orange marmalade and thin wheat crisps.
