Description: This is a wine of coiled energy deep within its muscular frame. The sinewy structure of interlaced tannins easily supports the multiple dark berry and cherry notes while the seam of balanced acidity adds a youthful vigor. Exciting in the glass as it stands,; this wine will also mature with grace as the intrinsic tensile strength within gives way to a refined serenity.

A match is made in the supple yielding texture of Caprano, this semi-firm goat cheese. Wonderfully light and buttery, this cheese has soft aromas of “goatiness” with a rich creaminess and sweet hay component. The fine Cheese Company in Bath England has created “toast for cheese” and this month I am adding some texture to tickle your palate. This fruity crisp has a pronounced crunch provided by sunflower seeds, toasted wheat flower and pistachios. The apricots provide a slight sweetness which rounds out the flavor profile. Pairing this holiday classic we look to one of our own classic wines, Vineland Estates 2013 Cabernet Merlot. Beautifully blended, this vintage shows peppery plumb, ripe blackberry, black currant, tart cherry and fresh shaved cedar. The balance between the cheese, toast and wine creates a harmony within the structure leaving nothing wanting.
