Description:Description: The growing season of 2012 was very warm and sunny, and it allowed us to hand pick grapes with intense, ripe fruit flavours. Our 2012 Select Series Merlot is definitely showing the benefits of this great season. Plum, black cherry and blueberry all vie for attention on both the nose and pallet. Melding in to this ripe fruit core are sweet spices derived from time in French Oak barrels. Cloves, nutmeg and cinnamon all show through. Milk chocolate and vanilla flavours add more depth and intrigue to an already complex and concentrated wine. This is a very approachable wine that will drink well over the next 3-5 years.
Cheese Pairing: Blyth’s Smoked Producer: Blyth Farm Cheese Location: Blyth, ON Milk: Pasteurized Goats Milk Blyth’s Smoked, is a Gouda style cheese which carries a wonderful aroma of rich cream, light caramel and camp fire on the wind. As each wax coated wheel is sliced in half and then smoked, a balance is struck between a smokiness and the original fabulous aromatic character of the cheese. Blyth’s Smoked provides caramel flavour with a smooth, firm texture and mild saltiness. Creamy, sweet and savoury combine when we sip the Rosewood Merlot. Bold fruit aromas combine when these two get together; plum, black currant, dark cherry and spicy clove characterize this robust Merlot. The tannins are uniform and will march on for years indeed! This is a match made in heaven and one I will be enjoying on a cool late summer evening.
