Description: Evening Shadow
This varietal Cabernet Sauvignon is a rarity for Vineland Estates as our winemaker Brian is not a believer in the varietal as a stand-alone-staple for the Ontario climate. Still, an ideal, “red weather” growing season, such as we experienced in 2012, can make it possible to produce a world-stage worthy Ontario Cabernet Sauvignon. This particular wine has silenced the critics and ironically, its maker. it has a fully developed, rich, ripe nose of dark berries and cigar box plus an integrated palate of complexity, subtlety and resolved silky tannins. What is Brian saying? Not too much. He is busy enjoying this wine as it elegantly washes down the words he must eat.

Pacific Rock is a washed rind, semi firm cheese,
dyed a deep orange with a natural extract “Anetto”. The Brevibacterium linens, or, “B linens” are used to wash the outside of the cheese to enhance the aroma and flavour. This Cheese has a mottled textured rind and moves through a darker orange nail to a bright paste. Earthy aromas blend with a nuttiness, which is underpinned by buttery lactic accents. There is a great balance of salt and acidity on the palate with a light caramel nuance lingering. The Circle of Friends Evening Shadow is a wine I have been waiting for Brian to make for the past 3 years! Visually, this wine is bright ruby with purple hues. The aromas are fantastic! “It’s like filling a new leather piñata with fresh black berries, currants, cherries and pepper! When the frustration has ebbed from your aching arms and the treasures hit the ground, the earthiness is there to round out the profile. Bold aromas transfer like clockwork and when wine meets cheese, happiness ensues!
