Description:
This wine revealed its inner greatness of rich concentrated fruit, minerality and firm but silky tannins. This is a wine that was forged in flames of adolescence and it is better for it.

This two year old aged goat cheddar is an exclusive private label collaboration between Glen Echo and (Lenberg Farms) Mariposa Dairy. Encased in an artificial wax rind this cheese moves to a white pasty interior which shows evidence of lactic acid crystallization (crunchy bits). A rich and creamy earthiness is exuded by this cheese. Dense and fudgy on the palate, you get a salty tang and sour lactic notes one would hope for from a quality cheddar. The 2010 Reserve Cabernet Franc from Vineland is a wonderfully complex partner. A balancing act ensures with dark berry fruit characterized by confected cranberry and black cherry. A cedar spiciness creeps onto the mild palate wrapping you in a peppery embrace. The fruit gives way to a woodsy earthiness that compliments nuances of worked leather. This wine commands an extended finish which lingers and reaffirms this as a cellar worthy wine. This robust match and balanced pairing goes back and forth between bold tannins and savoury sharpness.
