This full and fleshy Riesling exhibits a rich tropical fruit aspect with distinct undertones of mango, melon and wildflower honey. Generous by nature it delivers ample fruit and a lasting comforting impression.

150 kilometers southeast of Montreal in a Benedictine monastery 60 monks live by the motto “pray and work”. The monastery was founded in 1912 by exiled French monks. Since 1943 part of their work has included making cheese, today it is the only cheese factory managed by Benedictine monks in North America. This blue cheese is aged for 3 months and this allows the flavour to intensify, making the texture smoother and creamier. The cheese has a mottled blue/green exterior and moderate penicillum veining throughout. On the nose one picks up a steeliness underpinned by mushroom, saline and an acidic piquant. The pairing for this bold cheese is Vineland Estates Falsetto. This wine has wonderful residual sugar level perfectly balanced by surging acidity. Acid loves acid in food and wine synergy and both have it in spades. The contrast that this pairing creates is the sweetness of the Riesling balancing the saltiness of the blue cheese.
